Grilled Shrimp with Tomatillo Salsa & Grapefruit Jalapeño Margarita with Clinton Kelly

16 jumbo shrimp (peeled & de-veined)
3-4 tablespoons olive oil
3 cloves garlic (crushed)
3 tablespoons fresh oregano (chopped)
4-5 wooden skewers (soaked in water)
1/2 small white onion (peeled, roughly chopped)
2 cloves garlic (peeled)
1 small jalapeno (chopped, plus more thinly sliced to garnish)
2 limes (juiced, plus more cut into wedges to garnish)
1 orange (juiced)
1 bunch cilantro (stems and leaves, plus more to garnish)
1 pound tomatillos (husked, rinsed, roughly chopped)
Kosher salt and freshly ground black pepper (to taste)
Preheat a grill or grill pan to high heat.
Season the shrimp with salt and pepper and thread 3 to 4 shrimp on a wooden skewer. In a small bowl combine the olive oil, garlic and oregano. Brush the mixture onto both sides of the shrimp skewers.
Place the shrimp on the grill and cook for 2 minutes. Flip the shrimp and cook for 2 to 3 more minutes, until opaque and pink. Remove shrimp to a platter. Drizzle with the tomatillo salsa. Garnish with cilantro leaves, jalapeno slices and lime wedges. Serve immediately.
For the Tomatillo Salsa: In the bowl of a food processor, add the onion, garlic, jalapeno, the juice of 2 limes, cilantro, and season with salt and pepper. Pulse until coarsely chopped. Add the tomatillos, and pulse until the mixture is almost smooth but with a little texture, taste to adjust the seasoning.
GRAPEFRUIT JALAPEÑO MARGARITA

3 tablespoons Fresh Squeezed Grapefruit Juice
3 tablespoons Fresh Squeezed Lime Juice (plus additional to rim glass)
3 tablespoons Simple Syrup
1 1/2 ounces Jalapeno-Infused White Tequila
1/2 ounce Triple Sec
Kosher Salt (to garnish)
Jalapeno Infused Tequila:
2 Cups White Tequila
1 Jalapeno (sliced, plus additional to garnish)
Fill a large rocks glass with ice. Transfer the ice to your cocktail shaker and add the grapefruit juice, lime juice, simple syrup, tequila and triple sec. Shake vigorously.
Place salt on a small plate. Dampen the rim of the glass with lime juice and dip in salt to garnish rim. Pour the contents of the shaker into the glass and serve with one or two slices of jalapeno.
For Jalapeno Tequila:
Place the slices of jalapeno in the tequila and allow to sit overnight. Remove jalapeno slices and reserve for garnish.
Tip: For the simple syrup: in a small saucepan add 1/2 cup water and 1/2 cup sugar. Bring to a boil, then simmer until the sugar dissolves. Allow to cool completely.
