Harry’s Turkey Recipe

-14 lb turkey
-kosher salt
-black pepper
-dried parsley, sage, rosemary, paprika
-rubber gloves
-kitchen shears
-meat thermometer

-Don’t wash turkey
-salt turkey
-spatchcock the turkey, separate the skin
-place dry ingredients in blender and blend to create seasoning
-rub seasoning between skin and meat
-put turkey directly on to oven rate and cook for 2 hours at 325 or until turkey reaches 160 degrees (test with meat thermometer)
-to cut turkey, cut the turkey breast across the grain
