Jill Connick’s Doodle Cake Recipe

➰DOODLE CAKE➰
Cake:
2 Cups Sugar
2 Cups Flour
2 Eggs
2 tsp. Baking Soda
1 can (Large) Crushed Pineapple-in juice

Icing:
1 stick butter
1  1/2 Cups Coconut (sweetened, shredded)
1  1/2 Cups Chopped Pecans
1 Cup Sugar
1 tsp Vanilla
2/3 Cup evaporated Milk-(small 5 oz. can)

– Preheat oven to 350 degrees.
– Mix together all Cake ingredients & pour into a  9 X 12 glass dish. (spray dish with Pam)
– Bake at 350 for 40-45 minutes.
– While baking, put all icing ingredients into a medium saucepan and simmer for 10-12 minutes.
– Pour warm icing over cake right when it comes out of oven.
– Delicious while warm, or let cool and cut into squares.
