Operation BBQ Relief: Pulled Pork

February 27th 2018

Crock Pot Pulled Pork

1 – Bone in Pork Butt also known as a Boston Butt or Pork Shoulder – 5-7 lbs

3-4 oz of Your favorite Pork Rub (simple recipe is below if you want to make your own but almost all large grocery stores carry great commercial rubs for pork these days).

Yellow Mustard

Bottle of your favorite BBQ Sauce

Liquid Smoke if you would like some smoky flavor

1 Crock pot

1 – remove from packaging and remove any excess fat from the pork butt you only need a small layer over the fat cap.

2 – rub a light coating of yellow mustard all over the pork butt so you barely see the mustard.  This is the glue that will hold on the rub.  You wont taste the yellow mustard unless you put it on too think.

3 – shake on your favorite pork rub covering all sides with just enough rub so you don’t really see the yellow mustard.

4 – place in the crock pot with the fat cap up

5 – add a 2/3 cup of water in the bottom of the crock pot

6- add a table spoon of liquid smoke

7 – cook on low for 8-10 hours until it is fall apart tender.

8 – remove from the crock pot and discard the excess fat from the bottom on the crock pot.  remove the bone from the pork but it should slide out easily (that is a sign it is done and ready to pull)

9 – put the pork butt back in the crock pot and shred it up. You can use forks or put cotton gloves under nitrile/latex gloves and use your hands.

10 – pour your favorite bbq sauce over the top of the pork and let it sit on low for another 30 minutes.  If you need to wait longer you may want to thin the bbq sauce with a little apple juice or beer.

11 – It is now ready to eat….

Serve on a hamburger bun.  Will make 12-16 good sized sandwiches.

Cook time 8-10 hours on low.  Need it sooner?  The first 4 hours cook on high and then turn it to low it could be done in 6 hours that way.

On a smoker you will follow the same steps above

1-4 but you would place it in the smoker at 225-250 degrees for about 6-8 hours until it is so tender the blade bone pulls out easily.  That will be around 195-200 degrees internal temperature.

Step 5 – put in a pan and pull apart.

Step 6 – add a cup of apple juice and mix into the meat.

Step 7 – make a sandwich and add the sauce to the top
